Australis is the next step from our Dark Emu – a dark ale aged in oak and brewed with native grains. It’s been lifted with Chinotto syrup made by the Bertoncello Bros from @omyrestaurantandfarm using Mountain Yuzu fruit, farm honey, and native aromatics like strawberry gum, lemon myrtle, and river mint.

The result is a dark beer with layers of citrus, gentle bitterness, and an oaky backbone. Earthy, spiced, and quietly complex.

  • Native grains: mamadyang ngalluk + burru ngalluk grass seeds harvested by Yuin people along the Wallagaraugh River.

  • Chinotto syrup: cooked, steeped, and built for flavour over a month.

  • Barrel aged: adds mellow tannins and depth.

Beer Pairing: We recommend pairing this beer with dishes rich in flavour, such as slow cooked meat, roasted meat and vegetables, with the bitterness of the beer cutting through the dish. Pairs very well with spicy dish too.

Art Print: Alongside the beer we’ve released a small run of lino prints by Gab Moore, made using a reduction printing method. Only 20 exist, each one signed and unique.
